I am the founder of Beer Lab Consulting, where I bring together over ten years of hands-on experience as a professional brewer, industrial engineer, and food technologist. Fermentation has always been more than just a profession for me — it’s a lifelong passion that bridges science, craftsmanship, and culture. Over the years, I’ve combined academic training in microbiology and engineering with a deep respect for traditional methods and cutting-edge innovation.
My goal has always been the same: to support producers and entrepreneurs in crafting outstanding fermented products, optimizing their processes, and exploring new creative directions.

My name is Domenico Cavallaro, but most people in the industry know me as Mimmo.
"I am the 2025 Italian Beer Sommelier Champion and a proud member of the Italian National Team of Beer Sommeliers, representing my country in international competitions. I am also a certified Beer Sommelier (Doemens Academy, Munich), a Hop Flavormaster (Barth-Haas), and a recognized expert in sensory analysis and brewing education".

My consultancy covers a broad spectrum — from recipe formulation and brewery setup to quality control systems and energy efficiency planning. I also design and lead educational programs, tasting events, and staff training sessions tailored to breweries, restaurants, and food professionals.
Based in Switzerland and active across Europe, I collaborate with craft breweries, restaurants, start-ups, and research institutions to turn challenges into opportunities — always with a tailored, human approach.
